Alice in Wonderland Trail Mix!

I’m late I’m late for a very important date -no time to say hello. Goodbye. I’m late! I’m late! I’m late! If you are on the run or on the road or indeed just sitting at home these trail mixes make the perfect summer snack! They are packed with luscious fruit and nut combinations loaded with vitamins,minerals and bursting with flavour.

The one in the picture was for our friend Alice -its got pecans, macademias, goji berries, cacao nibs, papaya, cashews, mullberries and incan berries !

Just to see who the star ingredients of this mix are :

Raw Cacao: fruity and nutty and straight from Oaxaca Mexico high in antioxidants and loaded with minerals!

The Incan berry : high in phosphorous, vitamins A, C, B1, B2, B6, and B12. They are also extremely high in protein (16%) for a fruit. Sweet and tarty flavour -make it one of my faves!

The Papaya : abundant in enzymes- great for digestion (meaning it rejuvenates and balances bacteria in the gut!)  an excellent source of vitamin C, rich in carotene (great for tanning!).

The Pecan : clinical research shows pecans may help prevent coronary disease  and gallstones, help lower cholesterol, aid in weight loss and support prostate health. Pecans are also loaded with antioxidants and more than 19 vitamins and minerals including vitamin E.

The Mullberry : besides being utterly sweet & delicious it enriches the blood and yin. It can be used to treat dizziness, tinnitus, insomnia and premature graying of hair.

The Goji berry : has been used for 6,000 years by herbalists in China, Tibet and India to: protect the liver, help eyesight , improve sexual function and fertility, strengthen the legs, boost immune function, improve circulation, promote longevity.

The Cashew : They contain healthy mono-unsaturated fats,magnesium, and copper which help prevent heart disease, promote strong bones, and give you energy!

That is a melon smoothie and our vegan cat Sheldon about to take a sip! I don’t blame him – it’s truly refreshing and he’s wearing fur in 35 degrees heat. We might do a post on our vegan cats later, but for now we want to announce:

Bacon, Lettuce and Tomato sandwich… without the bacon! Unhealthy bacon is subjugated here by Summer Veggie of the Month: aubergines aka eggplants!

This was made by our friend Claire who  came to visit from Berlin, she isn’t vegan or even vegetarian, and, to make it even more complicated, she’s French… So she takes food seriously! I would really like to hear from some French Vegans and how they experience being vegan in a country with so much tradition steeped in meat, cream and cheese.
This recipe is originally all American and all carnivorous – but Claire is an open minded maiden and was up for eating and uncooking, vegan style. This is what came out…

Easy Peasy Recipe

For the ‘bacon’

Slice summer aubergines thin but wide – Claire used  a carrot peeler

Marinate them in smoked paprika, crushed garlic, cumin, olive oil, sea salt (a pinch), a tsp of nama shoyu, 1tsp agave.

Dehydrate until desired crispy-ness is achieved.

The T/F/L Flax Crackers we used were mild in flavor as the bacon is the star of the sandwich!

Organic Lettuce

Organic Tomato

and a Tzatziki Veganese Sauce:

1/2 avocado

1 fresh juiced lemon

1 clove garlic

2 cucumbers

1/2 cup of hemp milk

blend to desired saucy-ness

Learn how to make it! Lavender is our latest obsession… It is spicy and soothing – we put it in savory and sweet things and its always surprisingly yummy.

We have another two classes coming up: Monday the 12th of July and Wednesday the 14th. Hopefully the government will have started acting like a democratic one and the strikes will be off, or maybe the public transport employees will decide it is an effective protest to let everyone ride for free… Anyhoodles – we hope you can make it!

Besides lavender lemonade and ice cream the menu will include; amaranth raw chocolate, raw vegan sushi, cucumber rolls with nut cheese, purple hemp mylkshake, apricot/peach crumble and more.
