Creamy Cauliflower And Saffron Soup


The winter in Athens this year has been mild, but lately it’s been windy and rainy and by my standards cold! I can already hear my friends in New York and Berlin telling me I don’t know the meaning of the word cold, as they have been enduring sub zero temperatures… Still for me this is ‘soup- weather‘. There is nothing more perfect for this time of year than a seasonal soup! It is so simple and nutritious so here goes:


5 saffron threads

2 medium sized cauliflower heads

2 medium or small potatoes (warning: don’t buy potatoes from Thiva – they are contaminated-more about this later!)

2 leeks

1 garlic clove


Leave the saffron threads to soak in filtered water for 2 to 12 hours (they will expand greatly during this time). You will later add the threads+water (which will have turned a beautiful color) to your soup.

Scrub the potatos clean with a hard bristle brush and chop them coarsely. Put them in a pot with just enough water to cover them and boil for about fifteen minutes. Chop up the remaining ingredients – they are going to be blended so you shouldn’t worry about cutting them finely.  Add the rest of the ingredients (even the green leaves of the cauliflower) and the saffron + water into the pot of boiling potatos. Boil until all the veggies are soft (or steamed). Once they are soft enough to blend, blend them all together! Serve with a generous sprinkle of extra virgin raw olive oil, freshly squeezed lemon juice and coarse black pepper. Told you it was easy peasy lemon squeezy 🙂

Eat-In Athens Part II


Το Σάββατο 26 Φεβρουαρίου στις 12:30 το μεσημέρι στην Πλατεία Εσπερίδων στην Γλυφάδα κανούμε το δεύτερο ΕΑΤ- ΙΝ για να γιορτάσουμε το δικαίωμα όλων για καλό φαγητό!! Θα στήσουμε τραπέζια για ένα χορτοφαγικό μεσημεριανό μεζεδάκι με αγνά υλικά, εποχιακά και ντόπια.

Όποιος θέλει να φτιάξει φαγητό το οποίο είναι χορτοφαγικό, με ντόπια και εποχιακά υλικά για το Eat-In, μπορεί να επικοινωνήσει μαζί μας στο μέχρι κ…αι την Παρασκευή. Για πιο εύκολο σερβίρισμα προτείνουμε φαγητά που δεν χρειάζονται μαχαιροπίρουνα και πιάτα, όπως πίτες, ψωμί, κέικ, μπισκότα, ή ακόμα και σάντουιτς ή ξηροί καρποί – Και αν δεν έχετε χρόνο για μαγείρεμα, ελάτε να φάτε!

Saturday the 26th of February at 12:30 in Plateia Esperidon Glyfada is where the second EAT-IN will take place. Come to celebrate everybody’s right to eat good food, as well as to remind yourself of the importance of enjoying food in a community environment, making it nutritive for your spirit as well as your body.

If anyone is interested in making something yummy and vegetarian, using local, seasonal ingredients for the EAT-IN contact us at by Friday. We are serving finger food only, like sandwiches, pies, bread, cakes, dried fruit & nuts, some vegetables and dips. And if you have no time to cook, you are always wellcome to join for a nibble and a chat!

Soiled and Seeded

Sitting at a crossroads between good old-fashioned tillage, experimental botany, insightful journalism and art & design, this is the kind of reading material we wish we had thought of first. Amongst its pages and on its web you may find anything from articles on Gumball machines repurposed as seedbomb dispensers (you never know when you might be in the mood for a spot of impromptu guerrilla gardening), non-ironic gardener profiles, or a photo reportage of the horticultural offerings found in corner stores in downtown Toronto (candy and cactus, orchids and aspirins, apparently). And of course, whether it is in its printed format or online, the magazine is in addition a real treat to look at…
