Raw Oklahoma Part II

We are back! A month in New York City working at Pure Food & Wine was an absolute revelation…But we are happy to be back in OKC with all our beloved Oklahomeys…

First day back in class and Chef Haylee has got us busy… First up,makin’ Kombucha!

What you see here floating atop the Kombucha is a SCOBY (Symbiotic Community of Bacteria & Yeast) it kinda looks like a little elephant, but really it is full of probiotics that do wonders for your gut flora which in turn helps with the better absorption of minerals, vitamins, and all the essential nutrients you need to live better 🙂

Salt! Chef Hail Haylee gave us a tutorial on different salts : from left to right- wood smoked salt,himalayan pink,black lava,red clay,crystal flakes,smoked salt,truffle salt! These are unbleached natural salts. Yeah that’s right conventional salt is bleached- why would they do that? No idea..The himalayan pink contains 85 essential minerals that are (you guessed it) …GOOD FOR YOU!

Ok this is special; It isn’t raw but it is so frikin’ delicious- it is a sweet shitake mushroom cupcake made by Kerstin (raw pastry chef ). Everyone had doubts about this combination including Chef Kerstin…as it turns out…she should have made more cuz these guys vanished immediately!

What are we doing when we are not at Mathew Kenney OKC (the new name for 105 degrees)?

For one we attended the Red Earth Festival in downtown Oklahoma City. More than 1200 American Indian artists and dancers from throughout North America will gather to celebrate the richness and diversity of their heritage with the world.  For three exciting days Oklahoma City will be at the center of Native American art and culture in America.

It was one of those times when beauty was overwhelming…
